Troy Fleischhaker began his career under Swiss Chef Henry Vultier in Banff Alberta in the early 1990's & went on to earn his Red Seal from S.A.I.T in Calgary Alberta. Troy worked with some of Calgary’s finest Chefs and restaurant groups, including the Concorde Group, the Mercado Group, as well as with Chefs Nicole Gomes & Grant Parry. 

Craving more global expertise, Troy went on to work in Melbourne, Australia, Edinburgh, Scotland and Beirut, Lebanon.  While in Beirut, and under the guidance of Chef Athanasios Kargatzidis, Troy helped manage 5 restaurants, working alongside a staff of just under 100 employees. It was during his days in Beirut that Troy refined his skills in menu structure, design, and kitchen operations. The growth in management that his time in Beirut offered helped grow his career not only as Chef, but as consultant.  

Returning to Canada, Troy founded Happy Salt Consulting in Calgary. Happy Salt provides consulting for restaurants and owners in the areas of food programs and restaurant development. Recently, Chef Troy has been working with Mark Barnett Television Productions, as Head Chef for the CBS Television Network's highly successful "Survivor" series.
